Save the Date: Truffle Dinner at Minestraio Trattoria Oct 19

Last year I enjoyed an all-truffle prix-fixe meal at Gino Angelini's former La Terza, to the dismay to some readers who said the would definitely have gone if only I had let them know in advance!

So here goes my advance notice. La Terza is now replaced by Minestraio Trattoria but Chef Gino is still throwing a truffle extravaganza. Last year's 7-course black truffle menu for $75 is now replaced by a 4-course menu for $90. Less courses, more money? But wait! This year's menu includes ... can you guess? White truffles.

Here's their full menu for the night:

First Course
Pure of Leeks with Scallop and Summer Truffles
Second Course
Ossobuco Agnolotti with White Truffles
Third Course
Beef Tenderloin Tagliata with Parmigiano Sauce and Summer Truffles
Fourth Course
Black and White Chocolate Mousse
Menu $90
Exclusive of tax, gratuity and beverage
Reservations required 323/782-8384

Truffle Dinner at La Terza

Last Wednesday Gino Angelini's La Terza bid farewell to summer truffles by holding a 7-course black truffle dinner. I thought for $75 this was a pretty good deal so of course I skipped class and went!

The server took quite a while taking our drink order and giving us the check at the end, but at least the dishes came promptly and smoothly - much much better than the 5x5. Of course they are not nearly as crowded. I guess Italians just like to take it slow ..

First course, we started with Scrambled eggs and black trufflesI don't know how he does it but his runny scrambled eggs are always so delicious. The intensity of the color also tells you how great the eggs themselves were as an ingredient - full of flavor.

Tuna tartar, assorted citrus, black truffles and Sicialian pistachio
An interesting flavor combination, with the citrus and the nuttiness (and slight crunchiness) from the pistachio. The truffles added to the nuttiness flavor.

Pan roasted whole quail, soft polenta and black truffles
The roasted quail was great. A pretty gamey bird that was flavorful and juicy. The skin is slightly crisped just the way I like it. The black truffles seem to be an afterthought here though since the quail already stands out so much and frankly needed nothing else.

Open ravioli, porcini mushrooms, black truffles and cream of parmigiano
I think the truffles worked the best in this dish. The combination of the truffles and the porcini mushrooms really make the flavors (and aroma!) stand out.

Veal Shank Agnolotti with Black Truffles
This may be my favorite dish of the night. The veal shank inside was just absolutely ... oh I'm at a loss for words. Basically I wanted them to put a pound of this stuff in front of me so I can eat it up! Not only was it flavorful and juicy, the tenderness was wonderful. The shank juice mingling with the black truffles also enhanced the truffle aroma, making the dish as a whole work so perfectly.

Beef filet, quail eggs, black truffles and port reduction
I was really stuffed at this point and trying to finish this filet was getting painful! :P
I liked the addition of the quail egg. Again here I felt the black truffles were just an excess addition - if it wasn't truffle night they could just serve this dish without them. Not that I am complaining about the abundance of truffles in this meal, it just would've been amazing if the dish and the truffles work together better.

The meal ended with Vanilla and Black Truffles Gelato
I was skeptical of this at first, but as it turned out, black truffles on gelato is an awesome idea. Second favorite dish of the night. Or maybe third after the quail, I don't know. The truffle aroma actually really enhanced the flavor of the vanilla gelato. It's hard for me to describe it, but I will say that I absolutely loved it.

And to think, this 7-course meal was cheaper than my one white truffle pasta dish at Angelini Osteria a year ago. I'll definitely be looking forward to more dinners like this one again! When I accept the fact that service at La Terza tends to be slow, I actually have a really enjoyable meal there.

Amazing 5x5 at the Water Grill

After reading tangbro1's review of the 5x5 Collaborative dinner at Melisse, I decided I had to try at least one of the upcoming ones, so I made a reservation for the Water Grill dinner on August 31. The guest chef for this dinner was Giuseppe Tentori of Boka (Chicago). Portion of the proceeds goes to the SoCal chapter of the Special Olympics.

We started with some amuse bouche by David Lefevre (of Water Grill). No, these aren't all mine. There were three of us, so one of each :)From the right was daikon radish, then crab cakes, and ... foie gras!

My favorite part of this amuse bouche, was of course, the foie gras!
The foie gras was amazingly smooth and rich! It was soooo good! It was served with an apple gelee, and the sweetness complements the foie gras perfectly! It was a bite of heaven!
A nice dish. All the accompaniments cut the richness of the uni and complement itvery well. You really have to eat them all together to get that unique combination of flavors!

Big Eye Tuna with Petite Mache, jicama, watermelon, pineapple. Served with quail egg and black quinoa, shellfish emulsion
Giuseppe Tentori, Boka
This was a nice and refreshing dish, with the watermelon etc on top of the fish. The tuna slices were nice and thick and the fish was fresh.

It seemed to me that the big eye tuna dish would've worked better as an amuse bouche and then followed by the richer foie gras and uni dishes ... not that I would've traded the fact that Chef Lefevre wanted to give us foie gras and uni for anything in the world O:)

Pan Roasted Sea Scallops with American Caviar and Yukon Gold Potato
Michael Cimarusti, Providence
The sauce was myer lemon-based but it was not tart as I was expecting. The diced potatoes gave it a bit of crunchiness - it reminds me of eating kettle chips :)
Scallop was nice, big and juicy. I think the saltiness of the caviar really took the dish to the next level.

Santa Barbara Spot Prawn Risotto with Asparagus
Gino Angelini, Osteria Angelini
I love Angelini's style - just simple yet excellent. The prawn was amazingly fresh and tender. The risotto was al dente and flavorful without overpowering the prawn. When I get hungry one night, out of all of tonight's food, this would probably be the one that I crave for.

Roasted John Dory, Mushroom Tart, Chorizo-Torpedo Onion Marmalade, Red Wine Mushroom Jus
Josiah Citrin, Melisse
This dish was good and nicely presented. The John Dory was tender and flaky. Overall it would've been very good, but then ... it was a little on the cold side, like it's been sitting out for a while :( Such a bummer ... Also, the toast was no longer crispy/flaky - it had gotten soggy due to sitting under the mushrooms.

Hawaiian Mero with Kobe Oxtail and Red Wine Sauce
Walter Manzke
Mero is a type of bass. It was nice and tender but it was cooked in duck fat on top of being a bass, so it's a very rich piece of fish.

Also, from the left we have the kobe oxtail on top of potato, followed by bone marrow on top of a slice of carrot, then spinach on top of celery root (and then the mero itself).
As you can see, this was a very rich dish. I started eating it, and while it was very tasty I felt that it needed something to cut the richness, so I decided to order the wine that was supposed to be paired with this:
Demetria, Syrah, Santa Ynez Valley, California 2005
The wine had been previously decanted and the result is an outstanding, smooth red wine! In the end the glass came out to $15, but it truly did go very well with the dish and cut the richness for me.

Yogurt Parfait with White Nectarine Sorbet and Clementine Sauce
John Park, Water Grill
This was also served with pistachio cake and pitted bing cherries. The white nectarine sorbet was superb. The yogurt parfait was nice and tangy - it has the consistency of flan, except not as smooth (since it's yogurt). Goes well with the pistachio crumbs and the clementine sauce.

Next came a big platter of the petit fours, including churros, pistachio and chocolate macaroons, lychee and pear jelly, peanut butter and jelly in white chocolate, and chocolate ganache.
The churros were extra sweet since the ratio of sugar coating/dough is particularly large in this case.
My favorites were the chocolate macaroons and the chocolate ganache.

Although we were stuffed, there's still one more little thing to devour. A small malt ice cream dipped in chocolate with rice crackers.

Overall it was an amazing meal! Having these chefs cooking for you themselves instead of the chef de cuisines really made a big difference, I think!
All the dishes were very well prepared and well thought of. If you guys can make it to the next one at La Terza, I would recommend it :)

Also, I managed to take photos with the chefs after the meal, fun fun :P

Twas the season

There is the season each year that you look forward to, that you save up all your money for, so you can splurge and spend it all in one go.
No, I'm not talking about christmas, nor the holiday season.

Naturally, I'm talking about the white truffle season. This year, I decided to give Angelini Osteria's white truffle dish a try. Got the pasta, as it was the cheapest :)

A friend of mine looked at me funny (the-you're-paying-that-much-for-plain-pasta-with -shavings look), but he just does not understand ... the odor! OMG! As you take a bite, the unmistakable white truffle smell just bursts in your mouth.

For dessert we had the chocolate pudding, which is the same as the Bunet that they serve at La Terza. Once again, was amazing. Very chocolatey but smooth.

We also had the panna cotta, which was very good, but everyone mainly went for the chocolate pudding :)

The Quiet Italian

The few bad things about Angelini Osteria (and these are not necessarily "bad" things, depending on how you look at it) are that it's hard to get reservations and it is always crowded. We think that this was probably the main reason Gino Angelini decided to open La Terza. And while La Terza with its white tablecloths and high ceiling seems much more formal than its Osteria counterpart, it actually feels more casual and relaxed (probably because you're not surrounded by dozens of Beverly Hill-ers).

We started with some bruschetta compliments of the chef. The bread at La Terza was drizzled with olive oil and black peppers, delicious and the peppers gave it a kick.

For appetizers we got mussels and clams in polenta. I never have imagined mussels, clams, and polenta together but they went very, very well with each other. The mussels were not on the huge side, but nonetheless the taste was excellent and we scraped the polenta off this dish.
In between we had some risotto with parmesan and artichokes, again, compliments from the chef.
For our main course, we had spaghetti with lobster and fried artichokes, and the rotisserie duck with swiss chard and dried figs.
Not enough lobster in the spaghetti, but the taste was nothing to complain about :)

The duck was juicy and tasty and the skin was crispy but not burned, just the way I like it. It goes very well with the chard and figs.
For dessert we had the Cioccolato which was a Piemonte's bunet. The bunet was excellent! with a strong chocolate taste. Highly recommended.
We also had the Affogato which is served at Angelini Osteria also.

All in all, the food was on par with Angelini, although the pasta dishes are probably better at the Osteria (the desserts are better at La Terza though). However, La Terza makes for more of a relaxed and pleasant dining experience.
