Crepe Making with Saltbox Farm at The KITCHEN at Boston Public Market

If you live in Boston, I'm sure you've visited the Boston Public Market, but did you know about The KITCHEN at Boston Public Market at the back of the market? The KITCHEN is managed by The Trustees, one of the largest owners and steward of agricultural land in Massachusetts and a founding member of Boston Public Market. The KITCHEN frequently holds hands-on cooking classes and educational experiences that highlight New England farmers, artisans, and chefs.
I recently got to attend a crepe making class with Saltbox Farm and the chefs from Saltbox Kitchen, their farm cafe in Concord, MA.

Since my mom was visiting me from Indonesia I took her along for the class.

Each table can fit four people and equipped with our own cutting boards, one induction stove per table, and the ingredients for our menu. The ingredients for The KITCHEN's cooking classes all come from the Boston Public Market, including some gorgeous oyster mushrooms for our crepes.

You prepare most of the ingredients hands-on during the class, starting with sauteeing the mushrooms and spinach, then preparing the batter for the crepes. Flipping the crepes take some practice but I think we all got it in the end!

The chefs and staff member also go around the room to make sure we're doing things properly. We made four different crepes that evening. One is filled with sauteed spinach, goat cheese, and hazelnuts (as pictured above).

Another crepe was filled with tomatoes, braised lamb, and ricotta cheese. The lamb would've taken too long for our two-hour class, so Saltbox Farm's chefs had already prepared them beforehand.

The braised lamb was quite good and now I need to visit Saltbox Kitchen in Concord! We all loved the oyster mushrooms as well and almost couldn't stop snacking on them before making the crepe. Luckily we left enough to fill the crepes with LOL

The crepes were paired with some Massachusetts wines and mead, courtesy of Alan Howarth from MA Wine Shop which exclusively sells Massachusetts wines. Yes, Massachusetts makes wines - even mead, a honey wine. I quite enjoyed the Trademark Red, a grenache made by Balderdash Winery in Pittsfield, MA using grapes from Edna Valley in Central Coast.

The KITCHEN at Boston Public Market hosts a Farm-To-KITCHEN cooking class every couple of weeks along with other classes. Some upcoming classes focus on the regions of France on Nov 9 and a holiday cooking class on Nov 25. You can find the full schedule here.
