Bar Toscana, Brentwood's Hidden Italian Gem

Bar Toscana is the cocktail bar next door to longtime Brentwood favorite, Toscana. The Italian trattoria has been in business for 26 years. In the competitive culinary world of Los Angeles, that means they must be doing something right!

For their cocktails at Bar Toscana, they have brought William Perbellini who came from Italy to head the bar program here.

I love grapes as a cocktail ingredient, and here it is paired with a grape-based spirit.

This was an unusually good negroni, expertly made and even smoother thanks to the barrel aging.

Under The Radar: Buffalo Club (Santa Monica, CA)

Buffalo Club is a fine dining restaurant in Santa Monica that's been around for 19 years, and yet not that many people these days seem to know about it.

The exterior looks like a dive bar - that's because it used to be before the current proprietor bought it and reinvented it as a restaurant. Walking in, though, especially after the recent renovation, reveals an interior much different from the outside - an elegant, dimly lit, quiet, dining room. After the latest renovation, there are now two dining areas: the white tablecloth Iroquois dining room and the more casual (and cheaper) Garden Courtyard.

The chef and part owner, Patrick Healy, has been at the restaurant since its inception, a rare feat for fine dining chefs in LA these days. Healy trained in France under Alain Ducasse and other 3-star Michelin chefs before opening his own restaurant and later joining Buffalo Club.

We let the sommelier, Brayner Ferry, pair everything for us and he welcomed us with a brut rose from La Maison du Cremant de Bourgogne.
Our dinner was off to a great start with the Dungeness crab salad, avocado wrap, asparagus, Belgian endive, spicy gazpacho ($23). Pictured here is half of the portion, the restaurant split them for us.

The precious crab salad sits atop the gazpacho and covered by fresh, creamy slices of avocado. It's not quite salad, not quite soup. Either way it was a great, light way to whet your appetite. None of the flavors were too strong as to overpower the crab, instead they come together well.

While I've had duck confit salads before, it's the first that the duck was this crispy. The meat was rich, but nicely by the greens and the gastrique. This was paired with a classic Chardonnay for Carneros, to cut the richness.

Casa Del Mar's New Lobby Lounge Bites, Barrel Aged Cocktails

Casa Del Mar has been elevating their cocktail program under the radar, inviting renowned bartenders locally and internationally to train their staff and help with new menus. One of the latest such consultant is LA's own Aidan Demarest.

Not only that, now you can age your own 5 liters of cocktails with your name or logo etched into the barrel! Choose from Brooklyn, Manhattan, or Vesper, or consult with the bartenders for your own. Once you finish the contents, you get to take the barrel home as a keepsake. The pricing for this starts around $500 per barrel (it depends on the spirits you use).

I tried their Barrel aged Vieux Carree (Hudson rye whiskey, Tariquet Armagnac VS, Carpano Antica, Angostura bitters, aged 8 1/2 weeks in new American white oak barrels).

The lead bartender, Raymond, has also been coming up with fun new cocktails using fresh produce, like the
Smoky Beets (Alipus mezcal, fresh beet puree, lime juice, Ras El Hanout). This may be my favorite out of the cocktails I tried. The beet flavor wasn't overpowering and the ras el hanout is a unique touch.

Doma (Beverly Hills)

The owner of Dan Tana has branched out of the old school Italian with Doma, a modern Mediterranean Italian restaurant in Beverly Hills. It's a casual but elegant space with a focus on seafood. The chef, Dustin Trani, grew up working in his family seafood restaurant, J. Trani's in San Pedro. He has also trained in Europe and worked in Thailand, and he brings these influences into his menu.

I got to the restaurant too early for my media dinner, so I sat at the bar and chatted with the bartender. The cocktail menu during the opening was simple, but he said that they will soon be expanding the menu to include more complex drinks including a barrel aged Negroski (Cynar, Campari, basil infused vodka).

He let me take a peek at the upcoming menu, which was definitely a lot more interesting than the opening menu. I ordered the Mexican Grill which was mezcal, Chartreuse, and peppers. Spicy and smoky!

After everyone else arrived, we sat down for an extensive tasting that started with some fresh Japanese hamachi sashimi, ginger soy, ponzu caviar, carrot, cucumber, scallion, sesame tuile ($18, the portion shown is for a tasting, probably not the full portion)

I won't show you everything I ate that night, but here are some of the many many highlights:

Local crispy calamari and rock shrimp, sweet and spicy Thai aioli, balsamic reduction, micro herb, $16)

This is an example of how Dustin's training in Thailand his dishes. The spicy aioli is a nice and unique departure from the usual tomato based sauce.

A lighter counterpart of the eggplant parmigiana, this is a simple and comforting dish.

Discover Fun New Cocktails at City Tavern (Culver City)

City Tavern is probably mostly popular for their craft beer selections, especially on the westside, and the fact that they have beer taps on some of the tables. The last time I went to City Tavern in Culver City I had focused on the beers and food, although the one cocktail I had was promising. Now, under the direction of Jeremy Back, City Tavern is coming out with some exciting cocktails.

Jeremy Back has not only played around with the cocktails, but beers as well. Instead of a slice of orange with your Hefeweizen, they now serve it with an orange popsicle!

Take turns drinking the beer and eating the popsicle, dip the popsicle into your beer. Whichever way you choose, you'll agree that this is so much better than an orange slice!

There will also be one barrel aged cocktail on draft, which will change periodically.
The one on the menu when I visited was the Missouri Mule (aged 6 weeks): pure Kentucky whiskey, Applejack brandy, Campari, lemon juice, yuzu bitters ($15). We also tried the new barrel aged cocktail, which at the time had only been aged for two days. The new cocktail was made with Ruby Port, limoncello, lemon and lime.

I'm a big port fan so I look forward to tasting the fully aged version of the port cocktail. Hopefully I haven't missed it!

Candy and Fire: Spring at 1886 Bar

Cocktails on fire, beer cocktail, a flight of barrel aged cocktails, Chartreuse candies, and spiked sodas. You can find all those and more on 1886 Bar's new spring cocktail menu. The Cinnablossom ($12) by Lacey Murillo is a table-side show, where the server will light up Lemonhart 151 on fire in the glass, then the cocktail itself (made with gin, lemon and homemade cinnamon bark syrup) is poured into the glass and extinguishes the flame.

The Bittersweet Farewell from Marcos Tello also gets fired up. The cocktail is made of gin, homemade passion fruit syrup, lemon juice, Campari, then the lemon garnish is doused with Lemonhart 151 and set on fire.

The Barrel Roll ($15, also by Lacey) is made with Bols barrel aged Genever, Carpano Antica, green chartreuse and garnished with a Campari "glass" candy. It's not just a garnish gimmick, the cocktail actually does taste better with the Campari candy.

Barrel Aged Cocktail Flight, New Fall Menu at 1886 Bar

Vintage Caprice, 1886's barrel-aged gin cocktail has been on the menu since last season. At that time, it was a 4-month aged cocktail. What we didn't know then, is that they were still aging 2/3 of the barrel. Now, the 8-month aged version has hit this Pasadena gem, and guests can now enjoy a whole flight of the Vintage Caprice: a freshly made one, the 4-month, and the 8-month aged. It's the best way to see what barrel aging does.

The Caprice is a forgotten classic cocktail made with gin (1886 uses Beefeater), benedictine, dry vermouth, and orange bitters. 1886 barman Danny Cymbal thought it had potential for aging. The "Vintage" Caprice is this cocktail aged in a Hudson bourbon barrel that has been rinsed with sherry. To fill the barrel, they dumped 24 bottles of Beefeater.
